This vinegar has its origin in the ‘criaderas’ of the old Bodegas José Pemartín & Cia. dating back to 1810.

Created through acetification from Sherry wine and years of aging.

It progressively acquires the darker tones, starting from amber and reaching mahogany. Nose is accented acetified Sherry wine. Taste is broad and fruity.
